Monovariety olive oil is made from a single type of olive, similar to how a single-varietal wine is made from one type of grape.
Just as wines made from different grapes, like Cabernet Sauvignon or Merlot, have distinct flavors, monovariety olive oils exhibit unique characteristics based on the specific olive used.
Each variety, such as Picual or Arbequina, brings its own tasting notes—ranging from fruity and mild to robust and peppery.

Priego de Córdoba is the home where all Nature Premium Olive Oil is grown.
Located in the heart of Andalusia, at the foot of the Sierras Subbéticas, it is historically linked to the most traditional cultivation of olive groves.
In a wonderful geographical environment in which it is located and at an approximate altitude of 652 meters above sea level, it has very fertile lands that are perfect for olive cultivation.
A harmonious landscape that generates an imposing sea of olive trees whose cultivation comes from the time of Roman domination where the olive groves experienced a great territorial expansion throughout Andalusia.
From Grove to Press: Cold-Pressed Olives at their Best
When October arrives, olives are already selected so that will shape our best juices.
Early harvesting, immediate grinding and cold extraction are the key to preserving the quality of the final product.
The cold extraction process is carried out by mechanical procedures and below 22 degree, with the aim of not altering the original flavour and properties of the olive to obtain a first extraction Extra Virgin Olive Oil (EVOO) with all its properties, vitamins and highly beneficial fatty acids for the body totally intact.
