VINTAGE: 2018 is characterized by moderate temperatures and abundant average rainfall above average, with a good production of high quality accompanied by a slow and leisurely ripening. The winter rain records were abundant during the first quarter of the year, with the presence of snow at the end of February contributing to the disinfection of the environment. We continued with the same streak of upward precipitation during the spring, with April and May being the months with the most fallen records, just at the right time. Flowering develops satisfactorily in mid-May. We entered June with a clean landscape with water reserves and moderate temperatures followed by a hot July but moderate by occasional rains, creating balance in the vegetative cycle. August begins with the veraison, coinciding with the typical Mediterranean dryness and high temperatures, which lasted until mid-September, then the heat passed almost suddenly due to the presence of cold humidity, at which point we began the harvest with some bunches that developed a maturity bordering on perfection, highlighting the great intensity of fruit and the precious acidity.
WINEMAKING: Strict and meticulous selection of grapes in the vineyard. Fully manuarvest, the grapes are collected in small 15kg boxes. After light de-stemming, the grapes are
placed into stainless steel tanks of 8,000-liter capacity for fermentation. Pigeages(pushing doal hwn the cap to immerse the marc) are then carried out for extraction of phenols of the skins and organic compounds within the grape materials. The maceration process is adapted to the plot according to its potential. Alcoholic fermentation and maceration with the skins take between 14 and 16 days.
Aging: Matured for 5 months: 20% in 400-liter oak casks of its third year and four-year use and the rest in stainless steel tanks on fine lees.
